Sharing with a simple, yet flavorful way to eat, pick of season, fresh green peas! This velvety soup is packed with flavor and sweetness yet is low in calories and is healthy and satisfying!

Especially on a chilly day, this soup is a bowl of comfort to me!

I'm very fond of fresh green peas. Growing up, often, all kids in the house were default-labour to shell peas and we always looked forward to it! well... not that we loved working instead of playing or anything, but we loved munching peas ;) open one pod, eat 4 peas and put one in bowl :) Journey of a lot of those fresh peas finished from pods to our mouth :) .... and so on... ;) hahaha

no kidding, fresh seasonal green peas are so sweet that you really don't need to cook'em.... specially when fresh picked, spring green peas are much sweeter and tender, then they loose sweetness and get dense and more starchy as sit for long time....

Vegan and Gluten Free Creamy Spring Green Peas Soup

All year long we end up with frozen peas..... I was so excited to see fresh green peas in market last week that I grabbed a few pounds. Indian Rice Pilaf with Fresh Peas is very common in home for dinner. So handful went into that! 1 pound of peas with pod yield about 1 cup of peas. It sure needs some time to shell'em but you won't mind doing some labor o eat fresh and healthy? won't you?

I used about 1 and 1/2 cup peas for this lite and healthy soup. This soup is just peas, onion, garlic, and some seasonings.... a simplest way to enjoy the sweetness and flavor of peas. If you are not a garlic person, you can skip it.... but I will never imagine not using garlic in soup... soo...

This creamy and vegan Spring Green Peas Soup is a bowl of comfort

Now lets talk diet!

Gluten Free? Yes, soup is completely gluten free. Even though you will see some bread croutons in few pictures. Croutons are completely optional.

Vegan? Yes, this soup is vegan, I have added a teaspoon of coconut cream to finish the soup just before serving. If you are not vegan, feel free to finish with some heavy cream. The base soup does not need any cream, if you have used fresh spring green peas and cooked as instructed, this is velvety enough to not demand even a drop of cream!

Other than these, soup is nut-free, soy-free, low-fat, low-sodium, and fit for paleo diet too! Just don't use any cream or bread croutons!
