Everyone loves waffle for breakfast but my family also loves to enjoy waffles for lunch. I often make savory waffles for breakfast which we eat with cilantro chutney and they taste so delicious. Last weekend, we were late for breakfast and it was almost brunch time. I decided to pair my savory waffles with some protein to make somewhat filling breakfast and only thing I could find in refrigerator was some portobello caps.

When we are on meat-free diet, all kind of meaty texture ingredients find a place to stay in my refrigerator and portobello mushroom is one of them. Visit my home on a meat-less month and you will find my fridge stuffed with mushrooms (lots of them). So I made these grilled portobello and waffle sandwiches, totally delicious and so very addictive. Initially, it was a quick fix and after eating them, I think, I will be bringing Portobello specially to make these sandwiches.

Ingredients

Directions

  • 1. In a bowl, mix together, sambal chili paste, 1 tbsp olive oil, lemon juice, salt and pepper (to taste) . Coat portobello mushroom caps in it and set aside.
  • 2. Heat a non-stick gas griddle and grill portobello mushroom caps till nice and tender per your liking (about 5 minutes)
  • 3. While portobello mushrooms are cooking, dice sun-dried tomatoes and chives very fine and mix to dry ingredients of Waffle Batter Mix. Blend rest of waffle ingredients together per Waffle Mix Package instructions and pour onto preheated and lightly greased Waffle Iron to make 4 Sun-dried Tomato and Chive flavored Waffles.
  • 4. Before removing from heat, top each mushroom cap with 2 tbsp of blue cheese, sandwich 1 mushroom cap between two waffles with some leaves of spinach. Serve with side of chips and enjoy!!

  1.  Waffles Mix I used called for 1/2 cup oil and 1/2 cup water - to make waffle batter that yields 4 waffles. You can add these ingredients as per package directions.
