Halloween time is almost here. Last year, during Halloween, I sold a big batch of Jack-o-Lantern Pockets or Sandwiches (if you wish to call'em) in a bake sale. They were so hit; kids were "goblin" it up and I had to bake another batch for a kiddie Party the very same night – “special request by our neighbors”.

Two things are most important for Kiddie Halloween Party – some Halloween fun snacks and lots of candies!! But, these savory filling and funky looking will surly be a grand hit among kids, I bet.

I recommend baking these fun treats for Halloween Theme parties, snack buffets or a kiddie activity.

  • 1. Set the oven to preheat at 375 F. In a large skillet, combine sausage, salt and pepper (about 1/2 tsp or per taste); cook over medium heat until broken down into small chunks and slightly caramelized (about 4-5 minutes).
  • 2. While the sausage mixture is cooling down, dust a work board with some white flour. Tear open cans of Pillsbury Biscuits, separate the biscuits and slightly roll each one to about 5 inch diameter. Place half of them on a parchment or foil lined baking sheet. Additional Notes: You will need 2 sheets to bake'em all at one time
  • 3. Top each biscuit with 2 tbsp of sausage mixture and 1 tbsp of gradated cheese. (make sure sausage mix is at room temperature before spooning it over biscuit)
  • Step for Recipe - Jack-o-Lantern Halloween Pockets 4. Press Jack-o-lantern cookie cutter over each of the rest half of rolled biscuits and keep placing them over sausage layered biscuit to make a sandwich. Now cut a piece of bell pepper and fit it in the mouth area of lantern.
  • Step for Recipe - Jack-o-Lantern Halloween Pockets 5. Brush egg wash over all the jack-o-lantern sandwiches and bake for 9 to 14 minutes or until edges of biscuits are golden brown. Let them cool on a cooling rack for 10 minutes before serving.
Savita's Notes:
I have used Pillsbury frozen biscuit dough to make these party lantern snack, you can also frozen or fresh pizza dough for these.
